I want to introduce you not only to an incredibly indulgent and delicious treat, Vegan Chocolate Raspberry Cashew Cups but to Ashlea of All the Healthy Things. All of Ashlea’s recipes are gluten-free as well as many that are paleo, whole 30 and easily adaptable for vegan diets. I love that she is a big believer in simple, whole, real foods.
I was so drawn to Ashlea’s food because of her commitment to help women aiming to live a healthy, happy and balanced lifestyle. And that means room for treats like these delectable Vegan Chocolate Raspberry Cashew Cups!
The moment I saw these, I knew I had to make them. Cashew butter is my favorite. (If you have a nut allergy- you could totally use sunflower seed butter!) We just went ahead and used Lily’s Vegan stevia-sweetened chocolate chips to make sure they were dairy-free.
While this recipe is simple, the addition of the raspberry jam was a brilliant and delicious pop of acid and sweetness! I also feel like blackberry or even apricot jam would be so good too!
By the way- Ashlea’s cups are much more attractive than mine! So definitely follow her instructions! The girls and I made them in a bit of an impatient flurry of activity that left us basically shoveling our slightly misshapen treats into our mouths as quickly as humanly possible. I blame quarantine.
No regrets though!!!! They were so good and because they were so rich, they really satisfied my craving in just a few bites. We stored the treats we didn’t eat in the freezer, but I must admit that they did not last long!
