Happy Thirsty Thursday!!! I know you guys are used to my brand of Thirsty Thursdays, typically dripping with booze- but it is my “Month of Healthy” after all. (By the way is anyone noticing how well I am doing staying on track!? I hope that you guys are enjoying and incorporating all of these new detox recipes into your life- they are making quite the difference in mine!
And one of the things that I heavily rely on lately is smoothies. I have a pretty standard one I have every morning, but I have been dying to start experimenting with more exotic smoothies. And I think my new smoothie dress-up fixation has got to be tapioca!
I used to make a coconut tapioca dessert back when I was a French pastry chef, and I still have an affinity for it. Not too sweet and with a soft , creamy, bubbly texture- I actually love the stuff.
When mixed with fresh fruit and a thick green smoothie it is a healthy and super filling breakfast or snack. I tend to eat it with a straw and a spoon!
*Tapioca is ok in the Paleo (and I think the whole30) diet!!
- Coconut Tapioca:
- ½ cup tapioca
- 3 cups unsweetened coconut milk
- pinch of salt
- 1 tablespoon agave
- ½ cup shredded unsweetened coconut
- Super Green Smoothie
- 1 cup kale leaves, packed
- 1 mango, peeled and chopped
- 1 banana
- ¼ cup blueberries
- 1 cup coconut milk
- Garnish: Blood orange, blackberries, blueberries, unsweetened shredded coconut
- For the Tapioca:
- In a small pot add the tapioca pearls and the coconut milk. Let it soak for 15 minutes.
- Then turn the heat onto medium high and let it come to a boil. Turn the heat down to low and simmer the tapioca until it is thick, about 15 minutes. Then take the tapioca off the heat and set aside to cool. Stir the agave and the shredded coconut into the tapioca and let cool- it will firm up further.
- For the smoothie:
- Combine everything in the jar of a blender and puree until smooth.
- Put one cup of the tapioca in the bottom of a glass or jar and top with cut fruit and then pour 1 cup of green smoothie over the top. Top with a sprinkle of unsweetened shredded coconut if desired.

This sounds great and and want to experiment with it. I have been trying all sorts of different ingredients while on a foreign location with my green protein powder and have come up with some interesting tastes. But if I can find some tapioca I will be adding it. It is so tummy looking!
