Hope your weekend has been great! I have been binge-watching a combo of Schitt Creek (omg so funny!) and Victoria (Ah-mazing!!! The whole family is obsessed!) and eating a weird amount of soup that I made.

And now I am gearing up for the week trying to figure out what a week in dinner is going to look like. EASY is what I need, and definitely delicious.

Who needs a super speedy weeknight dinner that is worthy of a dinner party!?

That’s why I made this rather luscious Spicy Tomato Seafood Pasta for you. And for me.

It’s a spicy tomato sauce filled with chunks of cod, shrimp and crab. Plus olives and fresh basil!

And it is next level good and super, super easy!

Spicy Tomato Seafood Pasta (Gluten-free)

Ingredients
  • 1 pound spaghetti
  • ¼ cup olive oil
  • 4 cloves garlic
  • 1 onion, roughly chopped
  • 2 pounds chopped tomatoes
  • 1 cup wine
  • ½ teaspoon red pepper flakes
  • 1 tablespoon oregano
  • 1 pound cod, in large chunks
  • 1 pound shrimp, peeled and deveined
  • 1 cup chopped fresh basil leaves
  • ½ cup niçoise olives
  • ¼ cup crab meat
  • Kosher Salt
  • Fresh Basil for garnish
Instructions
  1. Bring a large pot of salted water to a boil.
  2. While you are waiting for the water to boil, heat a large deep pan over medium-high heat and add the olive oil, garlic, onions and tomatoes. Saute for 5-7 minutes, stirring often until soft and starting to brown. Add the one cup of wine and stir well, scraping up any browned bits. Transfer to a blender and puree until smooth. Add back to the pan and add the oregano. Place a pan on the top and simmer over low heat.
  3. Add the pasta to the boiling water. When the pasta has been cooking about 5 minutes, add the cod chunks and shrimp to the sauce and gently stir. When the pasta is mostly done, but still slightly firm remove it from the pot and add it to the pan. Take a half cup of boiling pasta water and add that to the sauce too. Add the basil and olives and stir everything gently and cook the pasta and sauce over medium heat until the pasta is al dente. Season to taste with kosher salt and then add the fresh crab meat. Serve with fresh basil sprinkled on top.
