I ate a buttery broccoli dish that was kind of like this a few weeks ago in Chicago at the purple pig and it forced me to come home and see what I could make that involved broccoli and butter.
It started with me accidentaly browning the butter. But what a happy accident! Brown butter with sizzling garlic and chili is something special.
Then when you add the broccoli and cook it in a way that is somewhere between searing it in the hot pan and steaming it in butter- well, look out… The final love is applied with a fresh bright squeeze of lemon juice and then some crispy golden breadcrumbs for the finish.
This is something I would make as a side dish for seriously ANY meal. It is so delicious that even your children will be fighting each other to get to the broccoli!!
Recipe: Spicy Brown Butter Broccoli with Toasted Breadcrumbs
Ingredients
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 red Fresno chili, thinly sliced
- 8 ounces broccoli or broccolini
- 1/2 lemon
- 1/3 cup finely shredded parmesan cheese
- ¼ cup toasted breadcrumbs
- kosher salt and black pepper to taste
Instructions
- In a skillet or heavy pan, melt the butter and cook over medium heat until the butter is golden brown.
- Add the garlic and the chili and cook another minute until fragrant and golden.
- Add the broccoli and cook, turning often until the broccoli is tender, about 4-5 minutes.
- Sprinkle the broccoli with the parmesan cheese and squeeze the fresh lemon wedges over the top. Season to taste withs alt and pepper.
- Sprinkle the toasted breadcrumbs over the top.
