School finally starts for my kids on Monday. Um, Thank God. I think we are all looking forward to getting into a routine again. For me, part of that is thinking about the grind of churning out breakfast and lunch every morning. We are huge on smoothies, but I gotta tell you- sometimes you need to switch it up- same goes for afternoon snacks. Sometimes you need something nutritious and healthy that is also a little bit sweet and indulgent tasting- right?
Well the answer to all of my kids breakfast and snacking dreams may lie in this Oatmeal Cookie Granola. I got the recipe from Jessica Merchants new book. Jessica writes the blog How Sweet Eats, which is a day-in day-out smorgasboard of other worldly, mind blowing recipes, food porn and comedy. Thank you for that Jessica.
She has piled all of that into her first book aptly named “Seriously Delish.”
Today I offer you a slightly altered version of her recipe (mine is vegan and gluten free and I just HAD to add some dried cranberries!) as well as a fun giveaway to celebrate! And before we get to that giveaway- I have to tell you that my family is a tough and judgy crowd when it comes to good eats. And I am telling you, without exaggeration, that they gobbled this right up and loved it!

Recipe: Oatmeal Cookie Granola (Vegan and Gluten free)
Ingredients
- 2 ¼ cups old fashioned gluten free rolled oats
- 1 cup sliced almonds
- ½ cup ground chia seeds (you can grind them in blender or coffee grinder)
- 1 tablespoon beet sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup honey (agave for vegans)
- 4 tablespoons coconut oil, melted
- 2 teaspoons vanilla extract
- ½ cup mini chocolate chips (gluten-free, vegan, soy free- I use Enjoy Life brand)
- ½ cup dried cranberries
Instructions
- Preheat the oven to 325 degrees and line a baking sheet with parchment.
- In a large bowl, whisk together the oats, almonds, chia seeds, sugar, cinnamon and salt.
- In a small pot combine the honey, coconut oil and vanilla- bring to a simmer so that the ingredients have all melted together.
- Pour the mixture over the oats and stir with a wooden spoon until all of the granola is coated. Spread it evenly over the parchment lined sheet pan.
- Bake for 10 minutes then use a spatula to toss the granola.
- Bake another 10 minuets and then toss again.
- Bake another 10 minutes, but toss at the 5 minute mark and right when you pull the pan out at the end.
- Let the granola cool for at least 5 minutes and then toss in the chocolate chips and the cranberries and stir together. Store in a sealed bag or an airtight container for up to 1 week.

Cooking time: 30 minute(s)

Even as I write this note, it is raining. Fall is in the air in Colorado. I am looking forward to sitting down at my loom surrounded by the cozy and creative spirit that I feel in my weaving room. I can already see the golden leaves of the aspen tree outside my window, I will crack the the window just enough so that I can hear the rain and smell the rich earthy scent in the air. Is it that fall is such a fleeting season in Colorado that I treasure it the most?
I can already smell the cinnamon and oatmeal of the granola baking and of course I will add cranberries!

Oh cooler weather, it cant come soon enough for me. The leaves are so pretty. I make a homemade granola with coconut, two kinds of nuts, and yum cinnamon and unprocessed healthy honey that comes from way back in the country. As well as lots of other healthy stuff. This sounds good too but I get raves with my granola too.

I am looking forward to all the beautiful leaves and cooler weather. When growing up i hated fall, thought of it as ‘nature dying’ process. But my little one LOVES to play in the leaves, laughs so happily and tried to do it all winter long with brown nasty leaves.. He changed my perspective.

I love the fact that my children- ever since they were small, loved to gather fallen chestnuts from the large chestnut tree near our boulevard. I am not sure how it became a “tradition” but the kids have always loved it and although we don’t do anything with them, I love the fact that they still do it. I am hoping for heaps of chestnut piled high outside this year.
I also love that my husband and I have a Harry Met Sally night. When the leaves are lining the streets and the chill in the air just seems to be hanging on…. we love to watch this classic movie… I think we’ve done this for at least 15 years.

For the past few years we have been going to an “apple pressing” party. When I say we, I mean Bill, the kids, the grandkids, the in-laws, etc. Everyone who attends one time makes it their new-best-favorite-not-to-be-missed event…I mean last year my daughter-in-laws’ brother-in-law (yes, really) cut his business trip short by a day, flying back from Germany to attend the event, jet lag and all! So, it’s where a whole bunch of people pick an orchard worth of apples (maybe 500 heirloom trees), mash and press them using a jerryrigged wine press, and make gallons and gallons of juice we bottle and divide up among each other. It all takes place almost 5 miles down a dirt road in the hills of northern Sonoma. Oh yes, we all bring food to eat, even some really good stuff, the kids stalk lizards in the dry creek bed, dogs bark, and it’s generally like an Amish barn raising, except with apples. Maybe it doesn’t sound that great to others, but my gosh, it’s got it all for me…family, fellowship, food, community, and industry. Oh yes, and the juice is like drinking liquid apples. Well, hey, they are that.
Mary! This sounds like a little slice of heaven- or something from a movie! I love it. Does Bill still collect Apple peelers? I bought one last fall and thought of him 🙂 I remember hunting through vintage stores with him for those.

The smell and feel of Fall…wood burning in fire places, the vibrant colors of the leaves as they change, the crisp feel to the air (sweatshirt and jeans weather) and pumpkin custard in the oven!
I came across this recipe on Pinterest; I rarely feel the need to post a review.
I make a fair amount of granola and this is the best I’ve ever made. I used ground flax seed in place of the chia seeds because that’s what I had, and omitted the chocolate because it would be, well, gilding the lily. This recipe is fantastic! Thank you!

I Love, Love Fall because of the cool crisp mornings, the hint of a chill in the air and the fog that lay’s as a blanket over the valley in the mornings. I love fall because it inspires me prepare dishes that make my family get all excited for the meal to come. The enjoyment of them sitting around the table, settled in their chairs spilling the events of the day and completely enjoying the feast no matter how big or small.
Cooler weather, sweatshirts, pumpkin anything except pie – curry pumpkin soup, pumpkin bread, pumpkin dip, pumpkin coffee… the list goes on and on.
