Ohhh-emmmm-geeeee. I am so tired after such a long, busy weekend. On Friday night I threw a dinner party that I donated to an auction this past year. You can see pictures of the table here and here. I made roasted carrot soup, this kale salad, braised pork and this polenta. This was dessert– only I added some apples to the dish.

Then Saturday was our daughters School Auction with a Disco theme. Very Fun.

But that wasn’t all. We had Coco’s birthday Party Sunday and it was a Unicorn cooking themed party- so dang cute!! I mean unicorns was the theme, and cooking was the activity. Not that we cooked unicorn.

And now, I have to get my head back in the game! I have a lot of work this week and Coco’s Family Birthday and also, I seriously cannot believe that Thanksgiving is right around the corner. I am not prepared. I am not at all prepared!!!! And this is my first time preparing an allergy free Thanksgiving, which I am just taking it one dish at a time- just like these delicious Caramelized Onion Whipped Sweet Potatoes.

Fluffy, creamy, whipped sweet potatoes with sweet and savory caramelized onions folded through the potatoes for tons of extra flavor. They also happen to be a healthier alternative to sticky sweet yam and sweet potato dishes of you are looking for a change-up. Hope you love them as much as we do!

 

Recipe: Caramelized Onion Whipped Sweet Potatoes (vegan)

Ingredients

  • 2 cups coconut milk
  • 2 pounds sweet potatoes, peeled and chopped into bite size pieces
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 2 tablespoons vegan butter
  • 1 yellow onion, thinly sliced
  • 3 tablespoons dry sherry
  • 1 tablespoon red wine vinegar
  • 2 tablespoons sugar
  • ¾ cup coconut milk
  • 5 tablespoons vegan butter, cut into large chunks
  • kosher salt

Instructions

  1. Additional vegan butter and parsley for garnish if desired.
  2. In a large pot, add the coconut milk, sweet potatoes, garlic and kosher salt. Bring to a simmer over medium heat. Reduce heat to low and put a lid on the pot. Simmer on lowest heat for 15 minutes.
  3. Meanwhile, in a medium heavy pan melt the vegan butter and add the onions. Sprinkle with salt and let sweat for 12-15 minutes. Add the sherry, scraping all of the browned bits from the bottom of the pan and stirring while cooking for another 5 minutes until the pan is dry. Add the vinegar and the sugar and cook, stirring, for another 5 minutes.
  4. When the potatoes are done, the liquid will be almost completely absorbed into the potatoes.
  5. Transfer the potatoes to the bowl of a mixer and add the vegan butter and coconut milk. Whisk until light and fluffy. Season to taste with kosher salt. Fold the caramelized onions into the potatoes. Garnish with more vegan butter and parsley if desired.
