Hi Guys- it may be Thirsty Thursday, but what is drinking without snacks!?
Now these are most definitely healthier than your average bar snacks- but I am seriously telling you- these are delicious.
Wait. Let me back up. Fellow healthy blogger and friend Amie Valpone, who happens to be darling and sweet and brilliant at what she does just wrote a book Eating Clean and it is right up my alley.

Especially if everything tastes like these Sunrise Nori Wraps with Spicy Tahini Drizzle! These are crunchy, salty totally addictive snacks. But the awesome part is that I ate every one of the wraps in this picture (um, the minute I was done photographing them) and didn’t feel a speck of guilt- they are not only great too look at and great to taste but the are pretty much impeccable for you. - Sunrise Nori Wraps
- 6 nori seaweed sheets (snack size)
- ¼ small head red cabbage, very thinly sliced
- 1 large carrot, peeled and julienned
- 1 small yellow summer squash, julienned
- 1 small cucumber, julienned
- 1 large ripe avocado, pitted, peeled, and sliced
- 1 recipe Spicy Tahini Drizzle
- Spicy Tahini Drizzle
- 2 tablespoons freshly squeezed lemon juice
- 1 ¼ tablespoons miso paste
- 1 tablespoon raw tahini
- 2 medjool dates, pitted
- 1 garlic clove, minced
- ¼ teaspoon crushed red pepper flakes
- Water, as needed to thin the drizzle
- Place the nori sheets on a flat surface. Divide the cabbage, carrot, squash, cucumber, and avocado
- among the sheets. Top each pile of vegetables with a heaping tablespoon of the Spicy Tahini Drizzle, and then roll up the nori sheets into a tube shape.
- Make the tahini:
- Combine all of the ingredients except the water in a blender. Blend, adding water 1
- teaspoon at a time as you go, until the mixture becomes a thin sauce.

My favorite healthy snack is taking either slices of cucumber or halving cherry tomatoes and topping with smashed avocado (or smashed white beans), salt, hot sauce and cilantro or parsley. Easy and makes everyone in my office jealous! 🙂
Those nori wraps look AMAZING. I’m having a bunch of my family over for dinner next weekend and I think this is a perfect appetizer to serve. (And healthy, too!)
As for my favorite healthy snack – I’d have to say stovetop popcorn! I like to cook it with just a little bit of coconut oil and then top with nutritional yeast – it’s amazing! The coconut oil really gives it a nice coconut flavor.
My favorite snack is Greek yogurt and granola. So convenient, delicious and satisfying!
What beautiful colors! Those wraps look vibrant and delicious. My healthy snack routine is more of a rut- an apple one day, a handful of nuts the next. And I do love popcorn as well, but I think the amount of butter I add disqualifies it from being considered healthy.

Right now I’m going through a thing for avocado toast. My favavorite combo is mashed avocado w/garlic, sea salt, and pepper. I spread it on a slice of fresh spelt bread and top it with lots of sriracha, nutritional yeast and Alfa Alfa sprouts. So easy and delicious, and hits just the right spot!

My go-to healthy snack is a banana smoothie with almond butter, spinach, hemp seeds and almond milk. Or protein balls (almond butter, honey, flax seeds, oats).
