Ahhhhh. I love giving you guys free stuff. Especially when it’s an amazing cookbook that you are going to love so much.
This entire book is plant based and covers produce “from apples to zucchini.” In my first flip through the book in which I marked about a million recipes to try, I fell in love with one recipe in particular, and I am so thankful that I decided to make it.
It is the Spring Leek and Lemon Pasta with Mint Pistachio Pesto, and it is magnificent. It’s elegant and sophisticated in the layers of flavor and ingredients and the end product is not only totally delicious but really so pretty. I would and will absolutely make this for a dinner party.
If you follow me on snapchat, I made the entire recipe on snap, but I forgot to film the part where I was shoveling it into my mouth by the overloaded forkful. Because…. That would have just been awkward. But I attached the video of the cooking part here.

Onto the recipe! (I tweaked a few things to suite my allergies and what was going on in my kitchen (like extra peas and a radish fetish!!) but the exact original is in the book which you have got to get!
- Mint Pesto:
- 1 cup cooked green peas
- ½ cup pistachios
- 1 cup mint
- 1 clove garlic
- 2 tablespoons fresg lemon juice
- ¼ cup olive oil
- kosher salt
- Pasta:
- 1 pound gluten free pasta
- 1 tablespoons olive oil
- 2 medium leeks, thinly sliced
- 1 bunch radishes, cleaned, trimmed and sliced in half
- ½ cup chickpeas, drained and rinsed
- ½ cup cooked peas
- 1 garlic clove, minced
- 3 cups baby kale or spinach
- juice and zest of one lemon
- ½ cup fresh basil leaves, finely chopped
- ¼-1/2 teaspoon red pepper flakes
- kosher salt
- (I garnished with extra lemon zest, chopped toasted pistachios and chive blossoms)
- For the mint pesto:
- Combine all of the ingredients in the bowl of a food processor and puree on high until smooth. Season to taste with kosher salt and set aside.
- Bring a large pot of water to a boil over medium-high heat. Add the pasta and cook it to a minute short of al dente, reserving about ½ cup of pasta water.
- While the pasta is cooking, heat a large sauté pan over medium-high heat. Add the olive oil and the leeks and sauté for 1 minute, softening the leeks. Add the radishes and cook for another minute. Add the chickpeas, peas, garlic and greens and lemon juice and stir, cooking for 1 minute until the greens have wilted. Add the pasta and enough of the water to make the sauce loose and toss the pasta with the water and the vegetables until the pasta is al dente and everything is well combined.
- Remove the pasta from the heat and stir in the pesto, lemon zest, basil and red pepper until well combined. Season to taste with the kosher salt. Serve hot!

Honestly, just making my kids (and me) lemonade! I will use sparkling water, cut some lemon, squeeze some lemon juice and then a little liquid stevia and mix! They love it : )
My favorite way to use lemons is in loaf breads, usually combined with another fruit like blueberries, strawberries or blackberries. Delicious!

Easy! Lemon poppy seed muffins!!
I LOVELOVE lemons! I’m a native Los Angeleno born and bred so I grew up with lemon+orange trees in my backyard! Years ago, and simply because I’m most definitely not a fan of pineapple upside down cake, but have always loved the beautiful presentation this special occasion cake makes, I decided to make a Meyer Lemon Upside Down Cake!
I’m an amateur so it has to be simple+easy! First, I whip up my lemon cake recipe from scratch and set aside. Then, I bring butter and brown sugar to a boil in a small saucepan over medium heat, stirring constantly. Next, I pour the butter+brown sugar mixture into a lined springform pan and spread evenly on the bottom of the pan.
Next, I very thinly slice 3-4 lemons crosswise. I start by putting a lemon slice in the center of the butter+brown sugar mixture in the pan. I arrange more slices in overlapping circles to fill pan. Pour cake batter on top and bake!
The best part: the sliced lemons bake under the cake and absorb the butter and brown sugar, which then turns the lemons into a marmalade like texture and taste.

First the dish looks smashing and I have to make it!!! I love to use lemon in my lemon poppy seed baked donuts. The lemon just brightens up the baked donut and adds a delicious zesty flavor.
My favorite way to use lemon is to freeze a lemon and use the grated zest, fresh from the freezer, to add zing to cocktails, soups and pasta. Just a little makes a delicious difference!
I love to use lemons in orzo salad
Ohhh I love using lemons in pretty much everything, but I make this braised porkchops with onions and lemon slices that is super good.

OMG I use lemons in just about everything. When we leave Spokane & come over to your side of the mountain for Orcas I love catching fresh salmon or shrimp and exploring new ideas for cooking them. Lemon zest sprinkled on top of some freshly made, al dente taglitelle! Add cheese, olive oil and pepper and enjoy it on a hot summer night!

I have a very different lemon pasta dish that I love–very simple and quick! Lemons add flavor to so many dishes.
I love lemon! In fact, when I was pregnant with my first son I craved it constantly. My favorite sweet lemon recipe is lemon bars. For savory, I love hollandaise sauce. Yum!

Oh my god, I eat lemons whole. I love them so much. I’ll squeeze one in my water every morning and drink it throughout the day.

I use lemon in most things. I keep a lemon in the freezer then use it to add lemon zest to most dishes I prepare. I will use the entire lemon.

Lemons being one of MY fetishes, it’s hard to pick a favorite use for them. But since it’s Spring, and I’m inhaling copious quantities of asparagus, I’ll say it’s to use the juice on roasted asparagus…and the juice and zest in asparagus soup.

Homemade Limoncello is a must every spring…lemon trees are everywhere in my neighborhood and we make big batches of Limoncello and share the wealth with friends!
I layer dark chocolate ganache and lemon curd in a shortbread tart shell. Lemon and chocolate- a powerful combo!

It’s hard to pick a favorite use since I try to begin each day with lemon in my water. Might not be my favorite use, but definitely my most frequent use. I also like to turn regular mayo into something fancier (aioli); for this I use lemon juice and zest and put it on sandwiches usually made from leftovers.

Ooooh, love lemons! We have a Meyer lemon tree in our yard, and I love picking and using fresh lemons in my vinaigrette. But, my all-time favorite use is adding lemon juice, olive oil, and garlic to cauliflower before roasting…everything caramelizes…yum!
I know it sounds too simple, but my favorite way to use lemons is zesting 1-2 of them & juicing 1 into a fair sized mason jar of water, adding a handful of crushed cranberries, a juiced orange & decorating with lemon slices. If you only fill half full & leave overnight it gets a nice flavor. More people have told me my water is beautiful than I’d have expected!

I use lemons almost every day while cooking, that said my favorite is so very simple, lemon water. It’s the first thing I drink in the morning, and being a bartender, I drink it all day long(although I do make delicious cocktails using lemons for others)!
