Ok, lets talk Thanksgiving! This is the last side dish I am sharing before the main event on Monday: the TURKEY!
These Roasted Delicata squash rounds are so tender and delicious- you do not even have to peel them because the skin is so soft. These are brushed with sesame oil, sprinkled with kosher salt and onion powder and then coated with a crispy layer of toasted sesame seeds that give the squash a great little crunch! This is so tasty and such an easy side dish that truly goes with anything.

Roasted Sesame Delicata Squash

Ingredients
  • 2 Delicata squash sliced into ½-inch rounds, and seeded
  • ¼ cup toasted sesame oil
  • 1 ½ teaspoons onion powder
  • 1 teaspoon kosher salt
  • ½ cup sesame seeds (both black and toasted sesame seeds)
Instructions
  1. Preheat the oven to 400 degrees.
  2. On a sheetpan, toss the squash rings with the sesame oil, coating the squash well on both sides.
  3. Sprinkle the squash with the onion powder and with the kosher salt.
  4. Sprinkle the sesame seed combination over the rings, evenly sprinkling each one.
  5. Roast the squash for 15-20 minutes until the squash is tender and the sesame seeds crispy. Serve hot or at room temperature.
