It’s the first Thirsty Thursday of the year and SURPRISE, I’m not plying you with booze! Instead we are going to make Homemade Coconut Chai Tea!
While I don’t drink coffee anymore, caffeine is non-negotiable (I am a mom for goodness sake and I look like a haggard puffy scarecrow every morning until I get a good dose in my blood stream) only now I get it in tea form!
In the colder parts of the year, this Coconut Chai Tea is something I make often and this current 25 degree weather in Seattle is just the invitation I needed to make a batch. It is not only really good, but it has caffeine (thank goodness) and makes the whole house smell good while it is simmering away on the stove. Happy Healthy Thirsty Thursday!!
- 4 cups water
- 2 black tea bags (like Earl Grey or English Breakfast)
- 2 tablespoons honey or agave
- 1 cinnamon stick
- 5 cloves
- 1 teaspoon fennel seeds
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamom
- ½ cup coconut milk
- Simmer everything together in a medium saucepan over low heat for 20 minutes. Strain the tea into mugs and serve hot.
