While I don’t drink coffee anymore, caffeine is non-negotiable (I am a mom for goodness sake and I look like a haggard puffy scarecrow every morning until I get a good dose in my blood stream) only now I get it in tea form!

In the colder parts of the year, this Coconut Chai Tea is something I make often and this current 25 degree weather in Seattle is just the invitation I needed to make a batch. It is not only really good, but it has caffeine (thank goodness) and makes the whole house smell good while it is simmering away on the stove. Happy Healthy Thirsty Thursday!!

Homemade Coconut Chai Tea

Ingredients
  • 4 cups water
  • 2 black tea bags (like Earl Grey or English Breakfast)
  • 2 tablespoons honey or agave
  • 1 cinnamon stick
  • 5 cloves
  • 1 teaspoon fennel seeds
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • ½ cup coconut milk
Instructions
  1. Simmer everything together in a medium saucepan over low heat for 20 minutes. Strain the tea into mugs and serve hot.
