I have to start with the snacky stuff now, because we are only a little bit over a week away from the superbowl and I have lots of recipes to pack in next week! Even though I no longer have a team in the battle, I definitely have feelings about the snacks that are served!
So lets start with this Smoky Sweet Potato Hummus. It’s freaking delicious. I love the addition of the sweet fluffy baked sweet potatoes in this hummus. The sweetness pairs beautifully with the smoked paprika and all of the garlic in the hummus. YUM.
It’s also seriously easy. Whether you make homemade hummus: Here is the recipe!! Or you dress up store bought hummus (I like Trader Joes!) this is a crowd pleaser your friends will love. I serve with crudité or rice crackers and it’s always a hit! I have some other yummy bites for next week including an awesome plant-based chili, but there is still time if you have a special request pre-superbowl!! - 1 ½ cup creamy homemade hummus- link to recipe is above (or store bought hummus)
- ¼ cup hot water
- 1 cup baked sweet potato, skin removed
- 2 teaspoons smoked paprika
- 2 tablespoons olive oil
- Sprinkle of everything bagel seasoning and smoked paprika
- In the bowl of a food processor, combine the hummus, hot water, baked sweet potato and paprika and puree until smooth and fluffy. Season to taste with kosher salt and then spoon into a serving bowl.
- Top with the olive oil and then add a sprinkle of everything bagel seasoning and smoked paprika to the top.
