One of the things that I would like to start doing here on the blog, is to start highlighting the content of other creators. Specifically I would like to highlight women of color. There are so many talented women out there creating amazing content that is so similar to what we all love here in this community, and I want to make sure that I share them as a resource for you. I am always looking for recipes and recipe inspo that live in the same vein with how we cook here. I look for gluten-free, dairy-free, plant-based, vegan and any combo of the above! (Not to mention a side obsession with fashion, beauty, home and flowers.) I will be working to find content that I love and can then share with you. I hope that you will feel comfortable also keeping an eye out and feel free at any time to email me or dm me with content or specific creators that you love so that we can share them with our community. I mean for this to be ongoing, not temporary.
I have things I am doing in my personal life as a way for me and my family to make a difference that will be ongoing, but those are for us to do. Not to list for you as a way to get a pat on the back or to justify that I am doing my part. However, if at some point, I need your help with what we are working on, I will speak up and ask!
But I want to make sure that there are some changes here on the blog too, and that we can grow this community with positivity and diversity and find new voices, points of views and talents to admire and inspire.
So without further adieu, I want to introduce you to The Best Kale Salad with Sesame Lime Tahini Dressing, created by Jessica in the Kitchen.
Jessica’s mission is to provide simple and delicious meals from her kitchen to yours. Here is what you can expect to find over on her blog:
– recipes focused around fruits and vegetables, with ingredients that enhance them rather than hide them.
– Easy, achievable, vegan and plant-based recipes.
– so many delicious options!
– A variety of wholesome ingredients such as healthy fats, grains, plant-based flours and sugars.
Jessica “believes in living a balanced lifestyle, and so I also put a lot of focus on exercising and taking care of your mental health. That also means that I don’t want you to feel restricted whilst in the kitchen or outside of it! Enjoy your vacation, eat your dessert and unplug every now and then. Live your best life!!”
Um yeah, that all sounds good to me! One of the other things that I have really been enjoying about her posts is the attention to detail with very specific tips for how to handle and process the ingredients. For example, I learned a new tip when making this salad! To reduce bitterness in kale salad, finely chop the kale and THEN rinse! It worked beautifully.
So, this salad- it’s awesome. I will be making it again and again. I used a dark green kale tipped with purple (found it at Trader Joes!), peppery red cabbage, sweet carrot ribbons, crispy pepitas and creamy avocado. But what I got the most excited about was the dressing. I make tahini dressing more than any other variety- but I have never added lime or tamari to it. Spoiler alert- it’s a very delicious combo. I encourage you to hop on over to Jessica’s blog to grab the recipe!
