We are one week into our new plant-based way of life and I am loving it! Pete is taking a little adjusting (although I suspect it is mostly mental!) and wants lots of snacks around to hold his hand through the transition LOL!

So I started with this delicious Creamy Avocado Hummus! Don’t be scared. As Pia said, it’s like hummus and guacamole had a baby and it’s delicious!

If you want to make your own homemade hummus (best thing ever) here is an awesome recipe for that. Or feel free to use a store bought hummus as the base- I like Trader joes!

I serve it with fresh cut veggies and rice crackers, but Pete likes it with chips and salsa- also amazing. Like guac but with a little extra protein! I think this would be a fun and healthy (and different!) snack to serve for the play-off games this weekend.

HOMEMADE HUMMUS RECIPE

Creamy Avocado Hummus

Ingredients
  • 1 ripe avocado, cut into chunks
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons water
  • ½ cup chopped fresh cilantro
  • 1 ½ cups homemade or store-bought hummus
Instructions
  1. For garnish: diced fresh avocado, micro cilantro sprouts, 2 tablespoons olive oil, lemon zest
  2. In the bowl of a food processor, combine the avocado, lemon juice, water, cilantro and hummus and puree until smooth and fluffy. Season to taste with kosher salt and then spoon into a serving bowl.
  3. If desired, garnish with fresh avocado chunks, cilantro, lemon zest and a generous drizzle of olive oil.
